Does anybody know when to use probes having high or low coercivity on magnetic samples?

Depends on your sample and what you want to image! If your sample is easily magnetized (soft) you might not want to use hard magnetic tips, because you might switch your sample or write magnetically on it. It also depends what domains you want to measure. Imagine a hard magnetic sample and a soft magnetic tip. The tip will be immediately switched and the phase will change abruptly. That is not very helpful if you want to image domain walls (small changes of the magnetization vector) for example, but maybe useful for high domain contrast. So choose wisely, depending on your sample and the results you want to obtain.
