What are the existing probes and for which type of applications (samples) would you recommend them?

Yes, p4 of the PF-QNM Application Note has this information, and it may be downloaded here:

The recommended probes are (from softest to stiffest)

ScanAsyst Air (~0.7MPa - 11MPa, e.g. Soft PDMS):  http://www.veecoprobes.com/p-3726-scanasyst-air.aspx

TAP150A (~5MPa - 500MPa):  http://www.veecoprobes.com/p-3652-mpp-12120-10.aspx

RTESP (~100MPa - 2GPa):  http://www.veecoprobes.com/p-3644-mpp-11120-10.aspx

TAP525A (~1GPa - 20GPa, e.g. Polystyrene, HOPG):  http://www.veecoprobes.com/p-3652-mpp-13120-10.aspx

DNISP-HS (10GPa - 80GPa, e.g. Silica):  http://www.veecoprobes.com/p-3612-dnisp-hs.aspx
