Request: Procedures/protocol Force Spectroscopy in AFM with BioCatalyst

I wonder if anyone here can direct me to some reading material manuals regarding the theories and procedures/protocols in doing force spectroscopy using contact/tapping modes. The model we have in the lab is Bioscope catalyst with ScanAsyst and Nanoscope 8.15.

I am trying to do force spectroscopy on some whey proteins samples in both air and liquid. They are relatively dry and soft. I have been reading the procedures and theories listed in the Catalyst Experiment Guide and the Help Window embedded in the software, however, still was not able to carry out the application. 

Some simple step-by-step guideline regarding the calibrations and the ramping function/point and shoot would be the most helpful.
